Make the Egusi Soup:

In a large pot, heat the olive oil over medium-high heat.

Brown the beef stew meat on all sides.

Add the onion and garlic and cook until softened.

Add the carrots, potatoes, beef broth, tomatoes, Melvins Barbecue Seasoning, salt, and pepper.

Bring to a boil, then reduce heat to low and simmer for 1-1.5 hours, or until the beef is tender and the vegetables are cooked through.
Make the Fufu:

In a large pot, bring the water to a boil.

Gradually add the maize flour, stirring constantly to avoid lumps.

Reduce the heat to low and simmer for 15-20 minutes, stirring occasionally, until the fufu is thick and cooked through.
Serve:
