Description

Egusi Soup and Fufu is a popular West African dish that combines a hearty, creamy soup made from ground melon seeds (egusi) with tender beef, fresh vegetables, and unique spices. Paired with fufu, a smooth dough made from maize flour, this dish provides a perfect blend of flavors and textures, making it a comforting and satisfying meal.

Ingredients
    Egusi Soup:
  • 1 pound 1 beef stew meat, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, chopped
  • 2 potatoes, chopped
  • 1 cup beef broth
  • 1/2 cup chopped fresh tomatoes
  • 1/4 cup Melvins Barbecue Seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fufu:
  • 2 cups maize flour
  • 5 cups water
Instructions
    Make the Egusi Soup:
  1. In a large pot, heat the olive oil over medium-high heat.
  2. Brown the beef stew meat on all sides.
  3. Add the onion and garlic and cook until softened.
  4. Add the carrots, potatoes, beef broth, tomatoes, Melvins Barbecue Seasoning, salt, and pepper.
  5. Bring to a boil, then reduce heat to low and simmer for 1-1.5 hours, or until the beef is tender and the vegetables are cooked through.
  6. Make the Fufu:
  7. In a large pot, bring the water to a boil.
  8. Gradually add the maize flour, stirring constantly to avoid lumps.
  9. Reduce the heat to low and simmer for 15-20 minutes, stirring occasionally, until the fufu is thick and cooked through.
