Description

Ingredients
    For the ugali:
  • 2 cups maize flour
  • 3 cups water
  • Salt to taste
  • For the sukuma wiki:
  • 1 bunch sukuma wiki, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tomato, diced
  • 1 tablespoon olive oil
  • 1/2 teaspoon Melvins Flow Salt
  • 1/4 teaspoon black pepper
Instructions
  1. Prepare the ugali:
  2. In a large pot, bring the water to a boil. Gradually add the maize flour, stirring constantly to prevent lumps.
  3. Cook:
  4. Reduce heat to low and cook, stirring occasionally, for 20-25 minutes, or until the ugali is thick and pulls away from the sides of the pot.
  5. Season:
  6. Add salt to taste and continue cooking for a few more minutes.
  7. Prepare the sukuma wiki:
  8. Heat olive oil in a separate skillet over medium heat. Add the onion and garlic, and cook until softened.
  9. Sauté:
  10. Add the chopped sukuma wiki, tomato, Melvins Flow Salt, and black pepper. Sauté until the sukuma wiki is wilted and tender.
  11. Serve:
  12. Serve the creamy ugali with the sautéed sukuma wiki.
