Description

This Nyama Choma recipe brings out the rich flavors of grilled, seasoned beef. Marinated with a blend of Melvins Herbal Seasoning, fresh herbs, and spices, the meat is tender and juicy. Paired with a refreshing Kachumbari salad made from fresh tomatoes, onions, and herbs, this dish is perfect for a BBQ or a hearty meal.

Ingredients
    Nyama Choma:
  • 1 pound 1 beef stew meat, cut into 1-inch cubes
  • 1/4 cup Melvins Herbal Seasoning
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped red onion
  • 1/4 cup chopped green onion
  • 1 tablespoon garlic powder
  • 1 tablespoon ground cumin
  • 1 tablespoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Kachumbari:
  • 1 tomato, diced
  • 1/2 onion, diced
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh parsley
  • 1 tablespoon lime juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Instructions
    Make the Nyama Choma:
  1. In a large bowl, combine the Melvins Herbal Seasoning, olive oil, lemon juice, cilantro, parsley, red onion, green onion, garlic powder, cumin, paprika, salt, and pepper.
  2. Add the beef stew meat to the bowl and toss to coat evenly.
  3. Cover the bowl and refrigerate for at least 30 minutes, or up to overnight.
  4. Preheat the grill to medium-high heat.
  5. Remove the beef stew meat from the marinade and discard the marinade.
  6. Grill the beef stew meat for 10-12 minutes per side, or until cooked through.
  7. Make the Kachumbari:
  8. In a small bowl, combine the tomato, onion, cilantro, parsley, lime juice, salt, and pepper.
  9. Toss to coat evenly.
