Jollof Rice and Chicken

Description
Spicy Jollof rice cooked with Melvins Lemon Chili Seasoning and served with chicken.
Ingredients
    Jollof Rice:
  • 2 cups long-grain rice
  • 2 cups chicken broth
  • 2 cups tomato puree
  • 1 onion (chopped)
  • 2 cloves garlic (minced)
  • 1 bell pepper (chopped)
  • 1/2 teaspoon Melvins Lemon Chili Seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Chicken:
  • 1 pound chicken breasts or thighs (cut into 1-inch cubes)
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Instructions
    Make the Jollof Rice:
  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion, garlic, and bell pepper and cook until softened.
  3. Add the rice, tomato puree, chicken broth, Melvins Lemon Chili Seasoning, salt, and pepper.
  4. Bring to a boil, then reduce heat to low and simmer for 20-25 minutes, or until the rice is cooked through and the liquid is absorbed.
  5. Cook the Chicken:
  6. In a separate skillet, heat the olive oil over medium-high heat.
  7. Season the chicken with salt and pepper.
  8. Cook the chicken until browned and cooked through.
  9. Serve:
  10. Fluff the Jollof Rice with a fork.

Serve the Jollof Rice with the cooked chicken.
