Description
Flavorful beef stew seasoned with Melvins Barbecue Seasoning served with ugali.
Ingredients
    Ugali:
  • 2 cups maize flour
  • 5 cups water
  • Beef Stew:
  • 1 pound beef stew meat (cut into 1-inch cubes)
  • 1 tablespoon olive oil
  • 1 onion (chopped)
  • 2 cloves garlic (minced)
  • 2 carrots (chopped)
  • 2 potatoes (chopped)
  • 1 cup beef broth
  • 1/2 cup chopped fresh tomatoes
  • 1/4 cup Melvins Barbecue Seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Instructions
    Make the Ugali:
  1. In a large pot, bring the water to a boil.
  2. Gradually add the maize flour, stirring constantly to avoid lumps.
  3. Reduce the heat to low and simmer for 15-20 minutes, stirring occasionally, until the ugali is thick and cooked through.
  4. Make the Beef Stew:
  5. Heat the olive oil in a large pot over medium-high heat.
  6. Brown the beef stew meat on all sides.
  7. Add the onion and garlic and cook until softened.
  8. Add the carrots, potatoes, beef broth, tomatoes, Melvins Barbecue Seasoning, salt, and pepper.
  9. Bring to a boil, then reduce heat to low and simmer for 1-1.5 hours, or until the beef is tender and the vegetables are cooked through.

  11. Form the ugali into balls or shapes using your hands.
  12. Serve the beef stew alongside the ugali.
