Ingredients
    For the bean cakes:
  • 1 can black beans (15 oz)
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg, beaten
  • 1 tablespoon olive oil
  • 1/2 teaspoon Melvins Herbal Seasoning
  • Salt and pepper to taste
  • For the spinach:
  • 1 bunch fresh spinach
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 1/4 teaspoon Melvins Herbal Seasoning
  • Salt and pepper to taste
Instructions
    Prepare the bean cakes:
  1. In a large bowl, mash the black beans until smooth. Add the breadcrumbs, Parmesan cheese, egg, olive oil, Melvins Herbal Seasoning, salt, and pepper. Mix well until combined.
  2. Form the cakes:
  3. Shape the bean mixture into small patties, about 1 inch thick.
  4. Cook the cakes:
  5. Heat a skillet over medium heat. Cook the bean cakes for 3-4 minutes per side, or until golden brown and heated through.
  6. Prepare the spinach:
  7. While the bean cakes are cooking, wash and dry the spinach. Heat olive oil in a separate skillet over medium heat. Add the garlic and cook for 30 seconds, then add the spinach. Cook until the spinach wilts, about 2-3 minutes.
  8. Season the spinach:
  9. Season the spinach with Melvins Herbal Seasoning, salt, and pepper to taste.
  10. Serve:
  11. Serve the bean cakes with the cooked spinach. Enjoy!
