Dodo and Pilau

Description
Aromatic pilau rice cooked with Melvins Flow Salt and served with dodo (plantain).
Ingredients
    Pilau Rice:
  • 2 cups long-grain rice
  • 4 cups chicken or vegetable broth
  • 1 onion (chopped)
  • 2 cloves garlic (minced)
  • 2 bay leaves
  • 2 star anise
  • 1 teaspoon cumin seeds
  • 1 teaspoon cardamom seeds
  • 1/2 teaspoon Melvins Flow Salt
  • 1/4 teaspoon black pepper
  • Dodo:
  • 2 green plantains (peeled and sliced into 1-inch thick pieces)
  • 1/2 cup vegetable oil
Instructions
    Make the Pilau Rice:
  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion and garlic and cook until softened.
  3. Add the cumin seeds, cardamom seeds, bay leaves, and star anise and cook for 1 minute, or until fragrant.
  4. Add the rice, chicken or vegetable broth, Melvins Flow Salt, and black pepper.
  5. Bring to a boil, then reduce heat to low and simmer for 20-25 minutes, or until the rice is cooked through and the liquid is absorbed.
  6. Fluff the rice with a fork and set aside.
  7. Cook the Dodo:
  8. Heat the vegetable oil in a large skillet over medium heat.
  9. Add the plantain slices and cook for 5-7 minutes per side, or until golden brown and softened.
  10. Serve:
  11. Serve the Pilau Rice with the cooked Dodo.
